Warlock: 7/43/11 build, does not assume you are hit capped and therefore assigns lots of points in this area. An Affliction build will not be substantially different point scores for this.

Hunter: BM spec using 41/20/0. The scores here use points from the Attribute Equivalency Matrix on Cheeky's spreadsheet after plugging in the gear on my Hunter, with modifications for MP5, INT and STA but not other defensive stuff like AC/armor/dodge/parry. Compared to the next build, you will do more damage in long fights but you and your pet will be more delicate.
41/20/0 PvE Boss Build
Standard Hunter BM 41/20 build. Grinding, no valuation for INT, MP5 or +HIT, values STA and Armor a little. Compared to the setting above, you will need to use more potions and mana oil and such during long bossfights. It doesn't make the same recommendations that Cheeky's spreadsheet makes, but then nothing does.

Prot Warriors
IMO here are the best 2 places for Tanks and people who have too much time at work to look at Theorycraft:

PROT build, with plenty of points for AGI,STR,Shield Block rating. Balanced STA, AGI, CRIT, PARRY, DODGE, and other values for setup below all-Kara gear. no hit cap for DEF.

Another Warrior rating system, straight up points by WoW item budget, 0 points for +def (I do a separate check on that to get to the magic number of 490)
by item budget, 0 value for +DEF, RESI
I keep picking at these scoring systems. Here's yet another one. Assumes hit cap, def cap, dodge=sbv=agi=str=hit=1, crit=.87, parry = .8, resi =.4, sta = .67
Prot Gear value for warrior, max points for +Hit and +Def
Druids
There are 2 good Druid sites that I know of, they have other links to guides and stuff from there:

This values gear only for levelling up through the Feral tree(assuming cat form after 20). I just started a druid, so below is a crude approximation of how good gear is for me in cat form.
it has limitied value while leveling, because Thottbot doesn't count the amount of AGI, STR, or STA on the greens with level based suffixes.
