Grinding as a holy priest is easy... just run dungeon after dungeon.  I also pick groups with pallys, hunters and warriors so I can need all the cloth that drops.  I am leveling very fast and equipped with all blue items!  If you have trouble finding a group as a holy priest you are doing something wrong!
