For quick money i'd say skinning cuz you can get leather faster than anything else.

ALL three make money. Period. I recommend that u pick 2, and work them until you get our mount. After that, you will know which ones you like better. Maybe you will drop one and take some other profession, or not - as suits your gaming interests.

The key is to figure out which one(s) you personally like. If you dont like it, you wont work at it; only by working it will you get money.

Sounds obvious, but I meet lots of people that stop leveling their collecting profession. It is like getting paid to level your skill, yet some stop working at it.

I have made a lot of money with all three. The real world example would be 'lawyer, doctor, or Corportate Chief'. You can be rich or poor at any of these, depending on what you do with it. Some people would rather be a litle less rich but enjoying what they are doing. (eg an underpaid public defender)

Different servers will see different prices for the same raw materials. (A shortage of herbalists = big pay day; not so much if lots of folks r doing it.) Often these prces go up and down.

Still, people always want mana and healing pots. Demand for potions will never go away.

People like jewels for slots and jewelry (with buffs).

Leather for leveling 'leather working' is also in demand.

All three will do the job.

Now, if I just keep collecting the raw materials as I go along, I still make money. Even without going to the Outlands, if there is a shortage of something, you can always farm it. (...once you see prices spiked, even temporarily.)
