I've heard that Prot Pallies can take an almost infinite number of mobs, and kill them all at once (well, not instantly, duh)
So how does this work? Where's the ability to regenerate health in battle? Seal of Light seems to only work on one mob, when I hit it, or else only on me.

Er, by seal of light I mean when I judge someone with it...
I multi-judge and switch between SOL and SOW with ret aura and consecrate and holy sheild and getting heals and mana form them I do just fine if more than 5 mobs.
I just rotate as to who I am hitting to refresh the judgement.

I soloed the Fel Reaver heart quest in Netherstorm last night and used this on the ambushers and did fine
I do know my limits and dont take on more than 2-3 casters at once ....GG I HATE CASTERS

Ok, so you have a limited source of healing, and so that effectively limits how many mobs you have.
But how do you not get insta-gibbed by all those mobs? Especially since you use Ret Aura? Maybe I've been playing cloth classes for too long...

aggro som mobs first or just places were the mobs r preset to come at u like group quests
It can be used to grind, yes, but you need lots of tightly packed mobs, or they will leash and run back.
Oh and they have to be melee.

BoS, ret aura, a sheild spike (highst lvl you can get), toss avenger's sheild into a tighly packed area of melee mobs, kick on holy sheild, lay down consencrate, watch em die. that can vary but that way is fun. as soon as you are able to get the sheild in zangermarsh from the sporrager. love that poison for AoE tanking. regen your mana/health during the fight with wisdom/light seals and judges you should be golden......no seriously you'll glow -_-
Holy paladin does this simplier and better. With my 2100 healing I have about 800 spelldamage - consecration works great and FoL spam keeps me at full health.

If you have the tanking gear, you can with consecs and ret aura... you wont be as effective as a true prot pally tho. Just put up a BoW or a BoK, switch between SoL/JoL and SoW/JoW to keep ur bars up.
While there are lots of guides to this subject that give great information, and I highly recommend that you look at them, here are the basics: AOE grinding is done best in protection spec (although of course it can be done in other specs, but it is easiest in prot at least including redoubt, reckoning and improved blessing of sanctuary, but ideally with holy shield as well). Get all the block rating gear (percentage to block, not block value, which is only good up to a point) you can and anything that gives reflected damage and/or damage mitigation is good. This includes a shield with the highest damage shield spike you can get, the razor gauntlets from DM, buffs like thorns from a nice druid and for a bit of fun eat stormchops too. If you are able the shield from Sporregar that is ideal. Find a place with lots of non casting mobs close together, cast seal of light on a mob, judge it and cast again. Then start backing into other mobs, consecrating just enough to keep them aggroed to you. When a mob hits you it takes damage from retribution aura and the improved sanctuary (and thorns if you have it, or razor gauntlets), when you block they also take damage form the shield spike (and poison if you have the sporregar shield) and from holy shield if you have that and have it up. Meanwhile redoubt and reckoning will be up constantly as long as you have enough mobs on you, so you are blocking nearly every hit and healing every time you kit them, often multiple times from reckoning. Additional useful items include Alhembic of Infernal Power from heroic UB (restores mana on 2% of times you are hit) and Figurine of the Colossus (increase block rating and on use heals you for 120 on each blocked attack). Note that normally you do not consecrate unless you are full on mana. Mobs will die fast enough without it, and this gear assortment Outfitted and speced this way I can fight 15-20 of the mobs in the Netherwing cave and keep health even. There is an optimal number of mobs for any type: if the number is too low or their rate of hitting you is too low then redoubt and reckoning do not proc enough and you will lose health. On the other hand if the number of mobs is too high you will also lose health as your shield blocks and heals have a harder time keeping pace. Note that on hits where you do not take damage (full blocks) the mob will also take no reflected damage. This can drag the fight out considerably, so it is better to have your block value total just under the damage that the mob you ar grinding does. Finally, I do not use consecration that much. While it speeds up the mobs dying, its not by as much as you might think since block oriented gear has little spell damage, and it forces me to have down time to drink, which offsets some of the gain in time. I do note that when I do this in places like Netherwing i get lots of whispers like "wow" and "Paladins need a nerf". If you go with someone else who can loot (and hopefully skin too!) you can just back thorough the entire cave of flayers, ravagers and crazed murlocs and clear it in a few minutes, never having to stop to rest heal or regain mana. i have picked up 3 world drop epics doing just that. Finally in response to the comment about doing this in Holy spec and using flash of light to provide healing, If you are grinding 15-30 mobs (yes 30, try the blood elves on top of the black temple, Ive done 38 at once, too bad the respawn rate is so slow) try getting off a heal while getting hit by that many at a time...and good luck with that.
As a Holy pally, I can take on 5 mobs and pretty much wipe them (assuming their melee) nearly all at once. Lots of gear of the Sorcerer for improved damage from retro aura and Concecretion spam, plus if their demons, use Holy Wrath and they drop like fly's. Holy light keeps me at full, and SoR one mob at a time while Concecretion coolsdown helps as well. Divine illumination (50% spell cost reduction for 15 seconds) helps fuckloads as well :P.
