I have built my Gnome Warrior up to level 33, but I picked Fishing as a secondary skill.
But I never use Fishing -- it is so boring.
I'm thinking about starting over to get rid of Fishing.
Any recommendations?

You CAN make an extreme amount of money from fishing. You could make over 100g a day from fishing if you know where to go and what to look for. (Not giving away any secrets).
In addition to this if you don't get your engineering up quite high your gonna burn a huge hole in your pocket. Even if you go and get your own materials almost everything you make until higher levels can only be used by other engineers and chances are they can make their own. Unless of cours your trying to anihalate some hordies and if thats the case go a head and smash, engineerings perfect. Hopes this helps a bit.
Mining & Engineering are good choices.
While you don't have to level up your fishing if you don't want to, it's really silly not to learn it at all. Fishing can provide you with materials to cook with really cheap. While the cost of food isn't really too high, every little bit you save can count towards getting your mount or better gear. And some of those fish sell quite well in the AH!
Skinning isn't a secondary profession...
Mining and engineering are good as you can use the guns you can make as a warrior
Keeping on topic, there is absolutely no point in dropping a character to get rid of fishing. You are limited to 2 main professions, but no limit on the number of secondary professions that you can have - other than the maximum number of secondary professions that exist.
Secondary Professions are:
First Aid
Fishing
Cooking
Riding (available at level 40)
So if you don't like fishing, just don't fish, what you know already isn't costing you anything or preventing you choosing something else.
