Well, Im a 54 hunter, and I really like the look of engineering, but Im not sure whether its worth dropping my enchanting when im quite high?

Any advice or suggestions?

No I would keep enchanting at 280. And make a Gnome character for Engineering sub mining. I have Gnome Engineering 279/315, with mining 228/300 Warlock. And a Druid level 19 with enchanting
101/150, sub tailoring 89/150, Hunter level 23 engineering. that will go Goblin engineering at 275 to match the warlock. Plus a rouge leather crafting sub skinning. and a Shaman jewel crafting sub mining, and a paladin lv. 16 Alchemy sub herbs. I hope this will help you decide.
