My hunter just chose gnome engineering.  You don't have to be a goblin engineer to use Goblin Jumper Cables XL, only to make them.  So a hunter/gnome engineer can still feign death to avoid a wipe, then rez the priest.

In addition, I've had alot of fun using the gadgets available to gnomish engineers.  Between managing shots, my pet, and when to use the trinkets, it's far more involved than casting frostbolt three times, cone of cold, frost nova, repeat with my mage.
